Winemaking Information
The fruit is hand-harvested, destemmed and moved by gravity into unlined cement vats. Fermentation with native yeasts and without sulfur or temperature control lasts from two weeks to two months. The wine is aged nine to ten months in cement before being bottled without filtration.
