Winemaking Information

The grapes are partly direct pressed and partly macerated for two to three days, the latter giving a boost to the yeasts and helping with natural fermentation. The wine is then aged on its lees in used demi-muits and Burgundy barrels for six months with regular bâtonnage.
SO2: Vintage dependant
Fining/Filtration: Unfined/Unfiltered

Fun Facts: 1/3 each Sauvignon Blanc/Fié Gris/Chardonnay. The name of the site, Frileuse, roughly translates to "little cold one", a nod to the flat, frost-prone nature of this vineyard. It is within the Clos du Tue-Boeuf in a sector that borders the Château de Frileuse. Thierry's grandfather used to be the château's farmer.
