Winemaking Information
Fermentation and aging can occur in different vessels each vintage depending on the global quantities. For this wine, a small foudre (1200l) and 228l barrels and are usually used along with enamel lined tanks in generous vintages. Long alcoholic and malolactic fermentation. Aged 11 months on the lees without racking or cold stabilization. The wine is normally bottled without filtration but may go through a light, non sterile one if deemed necessary.

Fun Facts: This wine is a single vineyard bottling from a one hectare parcel in the De Moor's village of Courgis. They consider this to be their best plot (with the exception of the 1er Crus). It has a particularly heavy amount of clay for their vineyards.
