Winemaking Information
Fermentation and aging can occur in different vessels each vintage depending on the global quantities. Oak barrels are typically used with enamel lined tanks in generous vintages. 36 hour débourbage. Long alcoholic and malolactic fermentation. Aged 11 months on the lees without racking or cold stabilization. Usually bottled unfiltered.

Fun Facts: This wine comes from purchased fruit sourced from two organic parcels, in total the equivalent of 1.10 hectares of land. The first parcel was planted in 1980 and is exposed West, the second in 2005 and exposed South.
