Winemaking Information
After a direct press, the grape juice is very lightly racked off its gross lees, then ferments naturally in glass-lined, underground vats for about two months using only indigenous yeasts. The wine is aged on its fine lees for 24 to 30 months in large underground vats with occasional bâtonnage. S02 additions are six grams per hectoliter after alcoholic fermentation with a possible adjustment at bottling.

Fun Facts: Monnieres-Saint-Fiacre is the first officially designated cru in the Muscadet. In the past, Pépière would occasionally produce this wine as Cuvée Eden in and/or it would go into Gras Moutons. Pépière owns 3.35 hectares within the cru. The vines were planted in 1948, 1984 and 1991.
