Winemaking Information
The grapes receive a slow and light direct press. Débourbage takes place for 24 hours and then the must ferments and ages in vat until bottling. Malolactic fermentation usually follows alcoholic fermentation and is never halted. The wine is then racked off the gross lees, a light filtration takes place and a small amount of S02 is added at bottling.
