Winemaking Information

Direct press of whole clusters. The juice is quickly cooled to help with racking off the gross lees. After they are removed, a pied de cuve from the same vineyard is added to the juice. Part of the wine is fermented and aged in barrique and the rest in concrete.
SO2: No sulfur added to the wine
Fining/Filtration: Light filtration at bottling (non-sterile)
