Winemaking Information
The bunches were harvested manually into small bins and partly destemmed, parlty left as whole clusters. The fruit was gently pressed and the juice fermented spontaneously with indigenous yeasts in cement tank with short five day maceration without temperature control. The wine was aged mainly in a huge, 10 hectoliter Slavonian oak botte and partly in old barrique with minimal racking. Based on the sanitary state of the harvest, one to two grams of S02 per hectoliter will be added on the grapes with an additional one to two grams at bottling.

Fun Facts: Eduardo acquired this flat, half-hectare parcel of ungrafted, 80 to 100 year-old, co-planted bush vines. The vines are a a field blend of of red and white grapes.
