Winemaking Information

The bunches are harvested manually into small bins and are partly destemmed and partly left as whole clusters depending on the vintage (with more stems in order to lower the alcohol). The fruit is gently pressed and the juice fermented spontaneously with indigenous yeasts without temperature control. Length of maceration depends on the vintage. Fermentation takes place in cement tanks without temperature control. The different parcels are vinified and aged for a time separately, then blended into huge Slavonian oak botti for further aging. Based on the sanitary state of the harvest, one to two grams of S02 per hectoliter will be added on the grapes with an additional one to two grams at bottling.

Fun Facts: Versante Nord Bianco and Rosso comes from six parcels totalling less than two hectares on the cooler, north-facing side of Mt. Etna (hence the wine's name) at elevations ranging from 750 to 950 meters. Each parcel is an traditional field blend of red and white grapes.
