Winemaking Information

The grapes are destemmed but not pressed: whole berries ferment spontaneously and age in clay amphorae for eight months. The wine is then finished in oak and acacia casks for two months prior to bottling. S02 is usually added only at bottling, between 20-35mg/l. In warm vintages with low PH, it may be added after malolactic fermentation.

Fun Facts: This wine is the result of a collaboration between Foradori and Marco Devigili, a biodynamic winemaker from Campo Rotaliano. The name translates to "off the path" and indicates its' atypical treatment of one of Italy's most famous grapes.
