Winemaking Information

The hand-harvested bunches are gently pressed, and only first-press juice is used. It is fermented spontaneously with indigenous yeasts and continues to age in old Burgundian barrels. The wine undergoes malolactic fermentation and remains on its lees with periodic batônnage in accordance to the lunar calendar. It is bottled on biodynamic “fruit days”.

Fun Facts: The fruit for this bottling comes from a single parcel called Le Murtet (not mentioned on the label) in the Boulards' home village of Cormicy, which lies in the extreme northeast of the Montagne de Reims in a zone known as the Massif de Saint-Thierry. It has been released as a 100% single vintage in some years (ex: 2015).
