Winemaking Information
The hand-harvested bunches are gently pressed, and only first-press juice is used. It is fermented spontaneously with indigenous yeasts and continues to age in old Burgundian barrels. The wine undergoes malolactic fermentation and remains on its lees with periodic batônnage in accordance to the lunar calendar. It is bottled on biodynamic “fruit days”.

Fun Facts: The fruit for this bottling comes exclusively from the grand cru village of Mailly in the little cluster of Montagne de Reims crus known as the “Grand Montagne”. Francis originally called this wine Mailly but was hit with a cease and desist from a Champagne house already using the name.
