Winemaking Information
Each parcel is vinified individually. The hand-harvested bunches are gently pressed, and only first-press juice is used. It is fermented spontaneously with indigenous yeasts and continues aging in Burgundian barrels. The wine undergoes malolactic fermentation and remains on its lees with periodic batônnage in accordance with the lunar calendar. It is bottled on biodynamic “fruit days”.

Fun Facts: This wine is the Boulard's entry level Champagne. It comes from six small parcels of Pinot Meunier spread through the Vallée de la Marne. They are the Boulard family's orginial historic land.
