Winemaking Information

100% whole-clusters macerate in wooden tronconic vats for 15-20 days with two or three pigeages. The wine sees a 12 month élevage in foudre (50%), barrel (25%) and amphora (25%). One gram of S02 per hectoliter is added at bottling.

Fun Facts: This is a single vineyard bottling from the estate is planted exclusively in selection massale. Many are from Hervé's father but a lot of them are selections from all over France, including Burgundy (Dominque Derain, Prieuré Roch).
