Winemaking Information

The grapes are intentionally left on the vines for higher maturities than the rest of the estate. Direct press, cold racking of the gross lees for 18 to 24 hours. Fermentation and aging on the lees in 500l barrels. Bottled after 24 months of élevage. No racking or filtration, one gram of S02 per hectoliter is added at bottling.
