Winemaking Information

The grapes are direct pressed and start fermentation in enamel lined tanks. Two rackings are done to clarify the wine and to slow down fermentation. When around 20 grams of residual sugar are left to ferment, the wine is bottled and aged 24 months of elevage sur lattes. Each bottle is disgorged manually.
SO2: No sulfur added to the wine

Fun Facts: This wine comes from estate fruit. The Chenin Blanc grows on clay and flint, the Menu Pineau and Chardonnay grow on sand and flint.
