Winemaking Information

The grapes are direct pressed and start fermentation in enamel lined tanks. Two rackings are done to clarify the wine and to slow down fermentation. When around 20 grams of residual sugar are left to ferment, the wine is bottled with 10 months of elevage sur lattes. Each bottle is disgorged manually.
SO2: No sulfur added to the wine
