Winemaking Information
The grapes are destemmed and direct pressed, where they ferment and age on the lees in foudre for an extended period of time (sometimes up to a decade) with no top-ups , the wine slowly evaporating while gaining concentration, texture and complexity.
SO2: No sulfur added to the wine
