Winemaking Information
50% of the grapes see a whole-cluster carbonic maceration for eight days, the other 50% is destemmed and vinified traditionally. The two are blended after fermentations are finished and the wine is bottled one month after harvest in a primeur style. Less than a gram of S02 per hectoliter was added at bottling.
