Winemaking Information
All the grapes are destemmed and vinified by varietal in 50hl concrete vats. Maceration lasts between 15 to 18 days. A maximum of three pigeages are done towards the end of fermentation to extract tannin but keep fruit. The wines are then racked to large foudres, where they finish fermentation and age for 12 months. The varietals are then blended and age for an additional eight months.

Fun Facts: This is the Richaud's top wine and is a selection of a single parcel named L'Ebrescade. These are high up in the coteaux of Cairanne at 327 meters of altitude. They border Rasteau. Yields here are very low (12 to 15hl/h) and the grapes are the most concentrated at the estate.
