Winemaking Information

The grapes are harvested slightly early to conserve a maximum of acidity present at the very beginning of a harvest and to find freshness in years of drought. This is largely why we have chosen to incorporate Counoise to the blend, an indigenous varetial worked little in our cellar but chosen for its fruit and low yields. It also blends excellently with Grenache and Syrah.

Farming: Organic (certified)

Fun Facts: Blend of of 51% Grenache, 34% Counoise and 15% Syrah from sandy soils southeast of Cairanne. The terroir was chosen for the delicate tannins it produces.
