Winemaking Information

Whole-clusters are foot trodden. Fermentation takes place in open wooden vat and amphora. Aged in 54l demijohns and amphora. Rackings carried out according to the lunar calendar.
SO2: No sulfur added to the wine
Fining/Filtration: Unfined/Unfiltered

Fun Facts: This wine comes from a parcel of very old vines only accessible by foot. A microscopic amount is made each vintage, with the number of each bottle hand written on each back label.
