Winemaking Information
Destemmed, 12 days maceration. Everything ferments in concrete vats. 40% is aged in 15HL foudres and the rest in concrete. It receives 20mg per liter of sulfur just before bottling.

Fun Facts: This one off IGT Rosso is actually a batch of Chianti Classico Silvio forgot to declare to the DOGC. By the time he realized this, it was too late to get the appellation and he was forced to bottle the wine as IGT.
