The grapes are hand harvested, destemmed and taken to the cellar for fermentation in steel tanks lasting 10-15 days.

Fun Facts: The wine comes from two tiny vineyards within the designation of Cian. One was planted in 1965 and the other in 1990. The Rossese vine is grown from a sapling (as the Mediterranean tradition dictates), so that the foliage of the plant shadows its roots and protects them from overheating.
