Winemaking Information
Grapes are 70 % destemmed and 30% whole-cluster, crushed and start fermenting in open wood vats with a 10-12 maceration. They are then racked to barrel to finish fermenting and aging. The barrel breakdown is: 30% new oak, 50% "one wine" barrels, 20% "two wine" barrels.
